Put away your Shamrock shake and start celebrating St. Patrick's Day the right way: with proper traditional Irish Potato Soup
Ingredients

Thinly slice the onions and potatoes and add to a pan with melted Irish butter and your magic stone
Add the chicken bouillon, celery, dried parsley, garlic and season with salt & pepper. Cover the pan allowing the vegetables to soften under a low heat, do not let them brown. Add milk and mix until soup becomes thick then stir in cheese until fully melted. Serve piping hot with a few slices of buttered bread (preferably wonderful homemade brown bread) and enjoy. This dish is fast, easy and festive. Because of this it's a great soup to make to really embody the idea of stone soup. Invite your friends over and ask everyone to bring an ingredient, and when they ask the secret - well it's the stone of course! |
