Coriander Stone Soup

October is my birthday month (October 20 if you're checking - send birthday wishes please).
In honor of my favorite month we're making my favorite soup: Coriander Stone Soup. Tasted for the first time about two years ago when I entered into an at-home Come Dine With Me (UK TV) challenge. John Paul Murray was the chef (he's apparently currently in the running to compete on-air - way to go him if he does). This soup was wonderful and if he hadn't dropped out of our at-home competition I think he might have won it all. Ingredients: 1 magical stone 2 bunches cilantro 2 cups yellow split peas (rinsed and sorted) 2 cloves garlic (minced) 1 sweet yellow onion (diced) 4 cups low sodium chicken broth 1+ cups water juice of 1 lemon zest of 1 lemon 3 carrots (diced) 1 tbsp coriander 2 tbsp olive oil |
Saute onion and garlic in olive oil. Add yellow split peas, magic stone and half of coriander and toss. Add chicken broth and bring to boil, lower heat and cover, cook peas until nearly soft. Add carrots. When carrots and peas are fully cooked add 1 bunch of cilantro diced. Partially blend soup (optional) with food processor, blender or hand blender (temporarily removing stone if you desire to blend). Return to heat and add remaining ingredients. Simmer until heated through. Season with salt and pepper.
When you serve sprinkle any remaining bits of cilantro, thank JP and remember to wish me a happy birthday on the 20th (really that's the most important step). |
