Alphabet Stone Soup

In April we are counting down from A to Z the days until rehearsal for Romeo and Juliet begin, so in honor we are remembering the fun of spelling our names in our soup by sharing a favorite alphabet soup recipe. Finding alphabet noodles is not always the easiest, so while alphabet noodles are preferred, if you're having trouble finding them but still want to try this yummy stone soup, rainbow spiral noodles are a great substitute.
Ingredients: 1 magical stone 1 large onion, chopped 3 carrots, chopped 4 cloves garlic, minced 3 ½ cups broth (vegetarian or chicken) 3 cups water 1 cup dried white beans, rinsed 4 large tomatoes, diced 1 tsp dried oregano 1 tsp dried basil 1/8 tsp cayenne 1 cup dry alphabet pasta |
Combine first six ingredients; boil.
Add next four ingredients; boil; reduce heat, cover and simmer stirring occasionally for 1 1/2 hours until beans are tender. Using a slotted spoon, remove most of the beans and transfer remaining liquid to a blender; process till smooth. Return mixture and beans back to the pot; stir in alphabet pasta. Boil then reduce heat; cover and simmer 8 minutes until pasta is tender but firm. Remove stone from soup. Serve and help spell things while eating. |
