​Bill's Pumpkin Pie
because sometimes you need more than soup and when you do, it should be pie

Pies are required for Thanksgiving at Executive Director Jeffrey Golde’s home. This Shakespeare inspired pie is the perfect one to keep the bard at your table in spirit if not in actuality (warning: if you make this pie Jeffrey might also show up at your door...in actuality, not just in spirit)

Ingredients:
Two unbaked pie crusts
2 cups of peeled, sliced squash (butternut or sugar pumpkin)

2 cups of peeled, sliced tart apples (Northern Spy, Cortland, or Granny Smith)

3 tbsp. butter

¼ cup of raisins

¼ cup of dried currants

¼ cup of sugar

½ tsp. cinnamon

½ tsp. nutmeg

¼ tsp. cloves

3 tbsp. sherry (we recommend a dark sherry)

directions:
  1. Heat the oven to 425F.
  2. Peel the squash and apples and slice them into pieces that are roughly the same size: 3 inches long, 1 inch wide, ¼ inch thick is a good guideline.
  3. Melt 1 tbsp. in a frying pan and sauté the squash until softened, about 10 minutes.
  4. Combine the cooked squash, apples, raisins, and currants in a bowl. Toss them gently with the sugar, cinnamon, nutmeg, cloves, and sherry. Set aside.
  5. Place the first (bottom) pie crust in a pie pan, allowing for two inches of crust to drape over the sides. Layer the squash/fruit mixture into the pie. Dot the top with the remaining 2 tbsp. of butter. Cover with the second (top) crust, crimp the edges, and cut a few vents in the crust to allow steam to escape.
  6. Bake at 425F for fifteen minutes, then lower the temperature to 375F, turn the pie, and bake for another 50-60 minutes. Total baking time is between 65-75 minutes.
where's the stone
We didn't add our Magical Soup Stone to the pie...because pie is not soup, but if you have a magical pie stone - maybe use it as a pie bird?

side note:
Yes, the impulse is to watch Titus Andronicus with any Shakespearean pie...but...remember Titus wasn't around for Thanksgiving...his idea of sharing food is...a little different...might want to wait until your stomach is empty for that one.
