Curried Apple and STONE Soup

to Facebook all I want to do is go apple picking. One of these weekends
soon I will. And then I'll make chili and pie...but I always pick too
many apples (it's just too much fun), and when I'm not picking by myself
but with the company, and they pick too many, and they forget to take
the apples with them when they go home...well...then I have to make
applesauce and apple donuts and apple cider and curried apple and stone
soup.

Instructions:
In a small sauce pan, saute the onion in butter. Add the stone, curry, cinnamon, cayenne, ginger and clove; cook and stir for about a minute. Add apples and broth and bring to a boil. Reduce heat, cover and continue to cook until the apples are tender. Either with a stick blender or by transferring the soup to a blender, puree until smooth. Return to heat, add lemon juice and warm. Garnish with extra cinnamon and toasted pumpkin seeds (if you've gone apple picking you'll probably have pumpkin seeds too). |
